honey ice cream and lemon thyme jam


Small pleasures for a little anniversary :))..... today I have a year more; (. Ice cream with honey and lemon thyme. It has a pleasant taste of honey and grass.

-250 ml milk - 250 ml fresh cream
- 4 egg yolks
- 4-5 sprigs of lemon thyme or normal thymus
- 160 grams of acacia honey (or thyme)
- 1 teaspoon grated grated lemon


1. Bring to a boil in a saucepan the milk, cream and sprigs of lemon thyme. Turn off the heat, cover and leave to rest for about 10 minutes. Strain preparation.
2. In a bowl mix the egg yolks with the honey until the mixture is smooth and creamy, then pour some milk into egg yolks, mix well and then slowly pour in milk mixture and cream.
3. Turn back the flame and heat the milk with the yolks (do not boil!) Until the mixture thickens a bit (like custard). Transfer the mixture in the refrigerator for 12 hours.
4. Shoot the mixture and transfer it into your ice cream maker.
